Enjoy a Mexican-inspired three course dinner starting with Street Corn Soup: queso fresco, tajin, micro cilantro; followed by a choice of:
- Coriander/Chili Rubbed Chicken: pistachio mole, fine herb salad
- Steak Frites: bone marrow butter, salsa matcha
- House Made Rigatoni: spiced lamb ragout, garlic, chili, cilantro
Dinner ends on a sweet note with a delicious Tres Leches.

Begin the evening with passed appetizers during Happy Hour; Mrs. Lovett’s Mince Meat Tartlettes: beef, pork, sofrito, red wine, and fine herbs.
Then enjoy a three-course dinner starting with Pumpkin & Squash Bisque: whipped goat cheese, pepitas, pickled walnuts, and annatto oil; followed by a choice of entrée:
- New York Strip — beet & red wine reduction, parsnip purée, celery root fondant
- Squid Ink Campanelle — puttanesca sauce, shaved garlic, parmesan reggiano (vegetarian)
- Roasted Duck Breast — preserved pluot & balsamic glaze, braised collard greens, black beluga lentils
Dinner concludes with a decadent Black Forest Cake.

Passed canapés welcome guests on arrival: Buckwheat Blini topped with yogurt, chives, and caviar; and Fried Falafel with tahini.
Dinner begins with Lentil Soup, followed by a choice of entrée:
- Lamb Kabob: saffron jasmine rice, spiced chickpeas
- Saffron Risotto (vegetarian)
- Wild Alaskan Coho Salmon: Idaho wild rice, Spanish sherry vinegar, broccolini
Finish with Orange Blossom Panna Cotta: honey-soaked, blood orange.

Hosted in The Cellar at Red Feather Lounge, this is more than dinner: it’s a vibe! Before each mainstage production, gather for a curated evening of cuisine, cocktails, and conversation. Enjoy a chef-crafted three-course meal with light appetizers and wine pairings, and mingle with fellow opera lovers, board members, and a surprise guest or two.
Adding to the atmosphere, Opera Idaho artists will serenade the room, and our General and Music Directors will share insights about the production you’re about to see.
